Our Organic Sumatra Gayo comes from the fertile Aceh Province highlands, with elevations of 4500 – 5200 feet, rich with black humus topsoil over a white sandy volcanic base. The Gayo Highland Cooperative consists of over 700 small acreage farmers, employing sustainable growing practices to produce 1,000 tons of premium quality coffees.

This Gayo, as unique to most Sumatra coffees, is wet-hulled, also known as Giling Basha. The process is made possible by the abundance of small farms in Sumatra and its tropical climate. The process begins in the standard way – removing the skin of the coffee cherry and then fermenting to break down and remove the mucilage. At this point, the beans would normally be dried to a point of stability before removing the final parchment layer. The difference in Sumatra is that instead of allowing the remaining bean to dry to a point of stability before removing the parchment layer, the bean is removed from the parchment much earlier, resulting in a moisture level that is two to three times higher than normal. The result is a raw bean that has a dark jade color and a rich, intense flavor. This Gayo offers a clean cup, with low acidity, that results in a complex taste of bittersweet chocolate and licorice, and hints of herbal fragrance and aroma.

A portion of proceeds from this coffee are committed to giving back to the community. School supplies and food are provided to students in the surrounding Aceh area and Medan areas. This effort is coordinated through non profit organizations to ensure accountability and long-lasting impact in the community.
